    aged for 3 weeks

    It brings out the rich flavor of natural tuna, so you can enjoy its rich taste.

  • Botan shrimp
    aged for 5 days

    Botan shrimp eggs and caviar give it a plump and sticky texture.
    The flavor of shrimp is concentrated.

  • Squid
    aged for a week

    Aged to bring out the sweetness, you can enjoy the soft texture and rich flavor.

  • Sardine
    aged for 5 days

    It is cooked with a light salt and the small bones are carefully removed to enhance the flavor and taste.

  • Snow crab
    from Hokkaido

    We boil the crab in a salt concentration that maximizes its flavor, loosen the meat, and serve it with crab miso as an accent.

  • Sayori
    aged for 5 days

    Finishing with salt gives it a rich aroma and flavor, and it is a masterpiece that allows you to enjoy its sticky and crunchy texture.

  • Kueh
    aged for 10 days

    Produced in Goto City, Nagasaki Prefecture, it is aged to bring out the maximum flavor, and is characterized by a flavor that spreads when you put it in your mouth.

  • conger eel

    This is a dish that shows the skill of our craftsmen, and you can enjoy the fluffy texture that melts in your mouth.

  • Natural tiger blowfish
    from Shimonoseki

    The puffer fish is layered in four thin layers to create a mille-feuille-like
    texture so that the meat is firm and firm, allowing you to enjoy the flavor of the fish to the fullest.

  • Karasumi

    Made to be soft and specially made for nigiri, you can enjoy the original taste with the scent of yuzu.

  • Nodoguro
