Every morning, early in the morning, we go to the market earlier than anyone else, purchase the best ingredients, age them using skilled techniques, and then take them out when the fish reaches its peak flavor. We believe that the only way to achieve the ``extreme taste'' is for highly skilled craftsmen to use their skills to transform the food into something that exceeds its value and is enjoyed deliciously.

weaving artist Saian Nishikata.
With parents who are Tochigi Prefecture Traditional Craftsmen, she learned the traditional techniques of hand-weaving, hand-dying, and hand-painting from an early age, and became the youngest person to be certified as a Tochigi Prefecture Traditional Craftsman.
We exhibit our colorful dyeing and weaving art style, which combines traditional techniques and modern sensibilities, not only in Japan but also overseas.
